Tasteful Tuesday

Jerked chicken, baked macaroni and cheese, Banana pudding...... get a bit hungry??? So am I!! And the solution to that problem is simple- Her name is GINA!! This Brooklyn based caterer might not stem from a five star restaurant; however her southern/ West Indies cooking talents will give anyone a run for their money.
          When asked who was her inspiration the response was straightforward and swift- Her grandparents! Originating from New Orleans and Jamaica, it’s no wonder her cuisines are hard to top and incapable of duplicating. They taught her all the ends and outs of the kitchen. From ribs that fall straight off the bone to fresh collard greens packed with impeccable seasoning Gina is what 1st Class Ladies like to call “a hot topic.”
         
     When asked what advice for chefs wanting to go far? “If this is your passion, stick to it and never give up.” Of course every upcoming star has a drive. A motive for doing what it is they do. “It’s a great feeling to cook, have people eat and enjoy what I’ve created.” And as true clients of Gina’s we sure do enjoy her meals! Her goal for the future is to open her own restaurant and expand her gift. Until then, you can catch Gina whipping  up her masterpiece dishes in the comfort of her own home. Catering for all occasions, groups sizes and venues. Be sure to look out for this star- she is certainly on the rise!!



                                         




                                              Now thats My Kinda Reciepe


Ingredients

  • 1 pound skinless, boneless chicken breast, diced
  • 1 (1.27 ounce) packet fajita seasoning
  • 1 tablespoon vegetable oil
  • 2 green bell peppers, chopped
  • 2 red bell peppers, chopped
  • 1 onion, chopped
  • 10 (10 inch) flour tortillas
  • 1 (8 ounce) package shredded Cheddar cheese
  • 1 tablespoon bacon bits
  • 1 (8 ounce) package shredded Monterey Jack cheese

Directions

  1. Preheat the broiler. Grease a baking sheet.
  2. Toss the chicken with the fajita seasoning, then spread onto the baking sheet. Place under the broiler and cook until the chicken pieces are no longer pink in the center, about 5 minutes.
  3. Preheat oven to 350 degrees F (175 degrees C).
  4. Heat the oil in a large saucepan over medium heat. Stir in the green bell peppers, red bell peppers, onion, and chicken. Cook and stir until the vegetables have softened, about 10 minutes.
  5. Layer half of each tortilla with the chicken and vegetable mixture, then sprinkle with the Cheddar cheese, bacon bits, and Monterey Jack. Fold the tortillas in half and Place onto a baking sheet.
  6. Bake quesadillas in the preheated oven until the cheeses have melted, about 10 minutes.
